Welsh Lamb Cookery Demo at Mold Food Festival | The Millstone

On Saturday 19th September, we took The Millstone kitchen on the road. Our chefs Mark and Zak did a live cookery demonstration at the Mold Food & Drink Festival, one of the biggest dates in the North Wales food calendar. We wanted to showcase one of the best ingredients Wales has, which is Welsh lamb.

It was a real pleasure to cook in front of such a lovely crowd. Mark and Zak talked through each step as they went, answered your questions and shared a few tricks from our kitchen.

Why Welsh lamb?

Welsh lamb is famous for its flavour, and it has protected (PGI) status, so you know exactly where it comes from. As a family-run, independent restaurant in Penyffordd, we’re proud to cook with quality local produce whenever we can. A festival on our doorstep in Flintshire felt like the right place to show what we can do with it.

What we cooked

We wanted to show how versatile one ingredient can be, so we served Welsh lamb several ways on one plate:

  • Pan-fried rump of Welsh lamb. We cooked it pink and rested it properly. Resting is the step most people skip at home, and it makes all the difference.
  • Lamb shoulder croquettes with tzatziki. We slow-cooked the shoulder, then crumbed and fried it until crisp. The cool, fresh tzatziki cuts through the richness.
  • Shepherd’s pie with a feta and lemon crumb. This is a classic comfort dish with a twist. The salty feta and bright lemon give it a crunchy, zesty top.
  • Pan-fried baby gem lettuce, pancetta and garden peas. Charring the lettuce brings out a sweet, smoky flavour.
  • Lamb jus. We made a rich, glossy sauce using stock from the slow-cooked lamb shoulder to bring the whole plate together.

Thank you, Mold

A huge thank you to everyone who came along, asked Mark and Zak questions and stayed for a taste. Thank you also to the Mold Food & Drink Festival team for having us.
